Not to worry – still kicking – been busy AF – between running the Colt 1911 – up to 110 rounds and slid the rear sight to the right to center it on the slide and gearing up for Christmas then Thanksgiving “stuff” and then zero Thanksgiving due to first significant snowfall of the season – the bird was thawed so we went ahead and cooked it . . .

The juice just ran out of the breast when I sliced into it . . .

For everybody that has cut the back out of a chicken – flattened it and grilled it – it’s the same thing – it’s just a matter of scale. Make sure you have a GOOD pair of kitchen shears as you will need them – and then score the sternum – flip it over and flatten -cut the wing tips off – foil and rack on a cookie sheet – we put salt / pepper / creole seasoning on it. One hour in a 500 degree oven then on the stove top with a loose foil tent for about 10 minutes – OMG!
We were just going to section it and freeze it – just me – my Blushing Bride – Curtis and Oliver, so no big dinner thing. Well we just had to “taste” it – don’t know what happened but roughly 1/4 of the bird vanished – and everyone lapsed into a turkey coma – LOL!

mommy threw a blanket over us and we crashed for about 3 hours – we love spatulacooker turkey!
Just look for “spatchcock” turkey – it is GOOD! – <<<here is a recipe for you>>> – there are a bunch of videos as well – just make sure the bird is thawed completely and pretty much at room temperature and the oven is hot when you do it!
