What’s for Dinner?? – I Made This – Good Stuff Alert!

One of my daily haunts “Paw Paw’s House” – <<< Main Site >>> – is cool stuff – all y’all need to trot your collective happy ass’s over there and check it out when you got time – one of the things he does is post recipes on occasion – one of the things I do is make those recipes on occasion – this one is quick – easy – and GOOD! . . .

“Cajun” Stroganoff is what he calls it – for lack of a better name . . .

Here’s the ingredient list for you . . .

1.5 lbs 80/20 ground beef
Trinity (onion, bell pepper, celery, chopped fine)
2 cans cream of mushroom soup
1 pint Half and Half
1 can RoTel, drained
1 pound Velveeta cheese
1 pound egg noodles
Salt, pepper, garlic powder

I made a couple of changes :

I used minced garlic ( about a Tablespoon and a half ) and I grabbed 2 cans of mushroom stems and pieces – drained them and threw them in – and added a scant 1/8 cup of Cholula Hot Sauce ( incredible flavor – very little heat ) and of course I didn’t buy any celery at the store because of course I had some – so I cooked it without celery – LMAO!

Cooking it is just about simple enough . . .

In a Dutch oven, sauté the trinity and brown the ground beef. Drain if necessary.  Add salt, pepper, garlic powder to taste.  Add the cream of mushroom soup, the half and half, and the RoTel tomatoes.  Cut the velveeta into cubes and stir it into the mix.

Boil the egg noodles in salted water.  When done, drain and add to the mix. Serve with garlic bread.  Enjoy.

And you can do just about anything to it you want – add cajun seasoning – add a can of drained peas – skip the noodles and serve over rice – and so on . . .
