Bear creek soup mixes are decent products – if they are not available in your local store(s) they are available on Amazon – they eat good when made following package directions – but all y’all know that ain’t gonna happen around here . . .
Get your soup pot out and put a couple of tablespoons of butter in it and saute the onions – when they start getting clear . . .
One onion diced – ready to go swimming in the butter . . .
Toss in a pound or so of diced chicken – I used some that I air fried the other day and was left over . . .
When that chicken is good and warm – drain a can of mushrooms and toss them in – now all the stuff is doing the backstroke in the butter . . .
Instead of 64 oz of water – use chicken broth (2 cartons) – add about 1/2 a tablespoon of fresh ground black pepper – heat to a rolling boil and whisk the soup in and reduce to a high simmer for 10 minutes or so – throw a chunk of black bread in the bottom of the soup bowl (optional but good) – ladle the soup in and eat yourself comatose – it comes out THAT good!
It doesn’t take a whole lot of effort to make a “pot of soup” into a pot of “damn that’s good” soup!
And a shout to you olive lovers out there – these are good! – a tart aftertaste – really interesting flavor – good stuff!
