This is a truly great recipe – have made this several times and it’s never been a disappointment – My God it’s bacon after all . . .
The first time I tried this there were four of us total at the house – we went through 7 lbs of bacon! – I said something about it to a friend and he’s like – 7 lbs of bacon?? Why did you guys eat 7 lbs of bacon?? – I explained to him that 7 lbs was all the bacon I had in the house – Yes it is that good. And you can experiment with the recipe – light brown or dark brown sugar – less pepper – a little white sugar ( not too much!! – it will carbonize in a heart beat and you end up with bacon charcoal – don’t ask how I know this ) – adding cajun seasoning instead of red pepper is pretty good as well – it’s hard to go wrong with bacon – candied bacon even works with fish heads – just saying . . .
I have a few simple rules in the kitchen – one of them is “When in doubt add Bacon”
