What’s for Dinner? – How about Creamy Wild Rice soup?

Bear creek soup mixes are decent products – if they are not available in your local store(s) they are available on Amazon – they eat good when made following package directions – but all y’all know that ain’t gonna happen around here . . .

Get your soup pot out and put a couple of tablespoons of butter in it and saute the onions – when they start getting clear . . .

One onion diced – ready to go swimming in the butter . . .

Toss in a pound or so of diced chicken – I used some that I air fried the other day and was left over . . .

When that chicken is good and warm – drain a can of mushrooms and toss them in – now all the stuff is doing the backstroke in the butter . . .

Instead of 64 oz of water – use chicken broth (2 cartons) – add about 1/2 a tablespoon of fresh ground black pepper – heat to a rolling boil and whisk the soup in and reduce to a high simmer for 10 minutes or so – throw a chunk of black bread in the bottom of the soup bowl (optional but good) – ladle the soup in and eat yourself comatose – it comes out THAT good!

It doesn’t take a whole lot of effort to make a “pot of soup” into a pot of “damn that’s good” soup!

And a shout to you olive lovers out there – these are good! – a tart aftertaste – really interesting flavor – good stuff!

Now you can take your phone out of your pocket and send a text message to just about anyone -anywhere – just about as fast as you can type it in – or voice to text if you use that feature – or even a video text . . .

Back in my misspent youth – you could walk along railroad tracks chasing pheasants and see the remnants of the telegraph system running alongside the tracks – creosote treated poles last a LONG time – not quite forever – but they put today’s “treated” lumber to shame.

Three from Smoky Mountain Knife Works

First up the “Marine” combat sword – click on the linked text to go to the product . . .

Comes with a decent sheath with a hard plastic liner that the sword goes in . . .

The stacked leather grip is just long enough to get a two handed grip on – and it looks good as well . . .

Tanto tip – the tip is not re-enforced – cut and slash yes – dismemberment not so much – the blade is a little thin so don’t get too carried away with it – LOL! . . .

Smoky Mountain is calling the blade finish “Black Stonewash” and it’s on a 440 stainless blade – it makes a real good looker out of it – for $29.99 it gets you into swords at a price point that is very affordable – if you figure out swords are not your thing you aren’t out a lot and you have a good looking hanger!

Second up – The Rough Ryder Copper Series Fish Knife – First one for me out of the “copper series collection” and I only have a single issue with it . . .

Good looking – the pictures don’t do it justice – smooth black bone – the copper bolsters – the copper bail shaped like a fish hook – and the hook sharpening stone just completes it visually . . .

Hook removal blade that’s serrated and very sharp – don’t ask – it’s better that way – LOL – and a bottle opener!

At 9 inches open it’s a decent size – about 3 1/2 inches sharpened on the cutting blade and 3 inches on the serrated give you plenty to work with – and it’s 440 steel . . .

At $12.99 it is an incredible deal – The stonewash blades / black bone scales / and copper bolsters are just plain sweet – And there is the problem – I am not going to throw this in a tackle box – Nope ain’t gonna – Nor will I jam it in a pocket full of keys and other stuff – it’s way too nice to beat it up carrying it – but it sure looks good in the knife box!

And third – The Boker Magnum Ibykus – And I saved the best for last – at $14.95 ? – this is one nice looking knife at just about any price . . .

Very Japanese “looking” – between the pictures on the Zytel handles and the two tone pattern on the tanto blade – a very good looker . . .

Blade is 440a – think 7Cr17MoV Stainless Steel – at just over 3 1/2 inches and about 9 1/2 inches overall not a large knife by any stretch . . .

On the left side of the handle about halfway down the crane’s legs is the only blemish I could find anywhere on the knife – and the light has to be just right to see it – it took about 10 minutes of fiddling to get a picture of it – a bunch of folks handled it and never picked up on the blemish . . .

And the pocket clip ( can’t change its position ) side . . .

Blade centering is good . . .

At less than $15 bucks – for a tanto blade assisted opening knife that looks this good – Oh My My Oh Hell Yes . . .

And before any of you ask – Nope, ain’t gonna carry it – went straight into a felt lined drawer in the knife box . . .

And also from Jay Leno – file this under “Sweet Bearded Seven Pound Baby Jesus” – north of 3000 hours of labor – Just Wow!

The fifties and sixty’s – some incredible times for auto innovation and production – for you folks that lived through it – you “get” it – almost bought one, I believe a 1967 or 8 (?) but for once I looked before I leaped – what the Hell was I thinking? – normally jump head first into just about anything – my Blushing Bride and I don’t make enough NOW to properly maintain an old Jaguar – proper parts are way beyond nose bleed level – the one we looked at needed a front wheel bearing – it was 20% percent of the purchase price of the car – 1969 was the last of the “hand made” cars – you sent the VIN to England and the factory would pull the specs and BUILD you a wheel bearing to specs – didn’t take much to figure out why the car was a “good” deal – LOL!

Crock Pot Chuck Roast / Upgraded Recipe

This is an upgrade version of the chuck roast recipe from awhile back – the only two things you add to make it much more better? – red wine and portabella mushrooms . . .

You need :

Chuck roast – 2 to 3 lbs

Jar of pepperoncini peppers

Package of Au Jus mix

Ranch dressing seasoning mix / one package or three tablespoons

Portabella mushrooms – about 1 lb

Bottle of red wine

Butter – one stick

Cooked rice or mashed taters – your choice – my choice is rice

Crock pot

Sunset to enjoy when your done eating and go feet up comatose mode optional

This is just about as simple as it gets – get a roast – that was easy . . .

Take your mushrooms . . .

And slice them up and . . .

Then take your wine and mushrooms . . .

And dump them into the crock pot – still with me ?? – Great!

Here comes an easy part – lay roast on top of mushrooms and wine – And drain the pepperoncini . . .

Then put the pepperoncini around the roast . . .

Then take the Au Jus mix and Ranch dressing seasoning mix and spread them all over the top of the roast . . .

Then take the butter out of the paper and slice it onto eight or ten pieces and then . . .

Spread them pieces over the top of the roast . . .

Put the lid on the crock pot AND DON’T FORGET TO PLUG IT IN!!! – don’t ask – it’s better if you don’t ask . . .

On low 7 or 8 hours – on high somewhere around 5 or 6 hours . . .

And away you go . . .

One of my favorite kitchen “things” are my crock pots – you can throw the “stuff” in it and let it do it’s magic – and DON’T FORGET TO PLUG IT IN!! – just saying . . .
